We believe in featuring the freshness of the finfish and shellfish we source.
Our creative signatures are in the technique and presentation of our offerings,
not in manipulating flavorless frozen fish or conceptualizing beyond our ability.
We work with sourcing the freshest possible seasonal seafood available.
The majority of our finfish is shipped in it's primal state (whole fish) and we
"break down" the fish for uses throughout our various menu offerings.
Integrity is in the quality of our ingredients, and we believe our guests appreicate and
understand the true value of our offerings.

We currently use local meats, honey, bread, and are looking forward to spring time and
sourcing fresh produce from local farmers.

To offer and provide Lawrence with a true seafood house that features fresh seasonal
species of finfish and shellfish that are sustainably sourced.
Lawrence, Kansas is the perfect place for the midwest's first sustainable seafood restaurant.
We are attempting to elevate the general public's knowledge and taste of why seafood needs to be sustained for generations to come.
In the most unlikely of geographic locations we are attempting to create a
"sustainable seafood epicenter" that will radiate knowledge and better choices
to protect the world's largest food source.
